  1. Flexible Chopping Mat Set

    6 hard plastic chopping mats are included in this set; 4 colored large mats and 2 clear small mats. They store and clean easily and can be used to funnel chopped foods into a bowl, pan, or pot! I have tossed all of my other cutting boards in favor of these great mats.

    This handy thermometer has many more uses than just checking the temperatures of foods. You will find you will use it everywhere. It has a temperature range from -4 to 248 degrees F. and is so simple to operate even a blind person can use it! (grin)

Recipes from last month's Cooking In The Dark Show


Shrimp with Spinach and Feta


Serves 4
Ingredients:
Notes from Dale:
  1. You can use either precooked shrimp found in the frozen foods department of your local grocery store or fresh shrimp with delicious results
  2. Add a little more white pepper for a dish with a little more spice. I used 2 teaspoons and it was wonderful!
  3. Do not over marinate the shrimp in the lemon juice. The acidity of the lemon juice will actually begin to cook the shrimp.

Directions:
  1. Place shrimp in a bowl. Combine lemon juice, oregano, salt, and pepper; pour over shrimp. Cover and refrigerate for 45 minutes.
  2. Drain, reserving marinade.
  3. Heat olive oil in a nonstick skillet. Add shrimp and saute for 2 minutes. Remove shrimp with slotted spoon; set aside.
  4. Pour reserved marinade into the pan then add the spinach. Cover and cookk for 2 minutes.
  5. Return shrimp to pan and crumble feta over top;
  6. cover and cook 2 minutes longer, until shrimp is cooked through.

Notes from Dale:
  1. Use a gallon zip lock bag to marinate the shrimp.
  2. I sauted the spinach for about 4 minutes
  3. This can be served by itself or over rice or pasta!
  4. Add some sliced white mushrooms to this dish!

Microwave Rice


Ingredients:

Dale taks a little feta cheese, some spinach, and shrimp and combines them into a delicious and easy main dish! Microwave rice is also discussed and demonstrated to go with the shrimp dish. Add a side of Broccoli Slaw, which is great anytime, and finish the meal with a dessert of Chocolate Mousse to have your taste buds dancing and your tummy full!
